Romany Pot



HI everyone, just thought I'd post a couple if recipes, that are my favourites;

This one is called Romany Pot, and no its not made with road kill or hedgehogs lol.....

ingrediants;

cooking oil
1 large onion
8oz / 225g frozen rabbit or chicken pieces ( tossed in some flour)
few mushroom stalks
1 tabs bramble jelly
1 tabs red wine concentrate (optional)
2oz / 50g wholewheat flour
sprig of thyme
1 1/2 pound of root veg mixed, scrubbed clean and roughly chopped e.g baby turnip ,carrots, potatoes
black pepper ground
4 tabs sage and onion stuffing mix
1 egg yolk


method;

Heat the oil in a pan, and fry onion until its transparent.
drain and place the onion in the bottom of a casserole dish.
Adding a little more oil to the pan you just did the onions in, , lightly fry the floured chicken or rabbit or even both.
Drain and add to the casserole dish with the mushroom stalks.
To the pan again, add the bramble jelly and 15 fluid oz / 400ml of water and the wine concentrate if using, and bring to the boil.
Pour over the meat in the casserole dish, and add the sprig of thyme, and the prepared veg, season to taste.

Mix the stuffing with the egg yolk, adding a little water if necessary, make into little balls and add to the casserole dish.

Cover and cook at gas mark 2 / 150C for 1 hour or until the vegetables are soft.

Enjoy,
this is good with fresh baked bread.
