cold tea cake



Good morning everybody,

Yesterday i made one of my favourite cakes.... cold tea cake,, oooer its soo yummy, I actually prefer it to xmas cake, you can still eat it with cheese if you like that sort of thing. lol.,..

Heres a picture and Im going to tell you how to do it;


ingrediants;

1 cup of cold tea. (you can use a standard size mug, I do)
4 oz / 100 / 125g margerine
1 cup mixed sultanas and currants ( i use all sultanas )
1 cup mixed dates chopped ( optional)
1 cup brown sugar
2 cups self raising flour
1 level teaspoon ground mixed spice
1 level teaspoon bicarbonate of soda

method;

Put the tea, margerine and fruit and sugar in a large saucepan over a low heat and bring to the boil.
stirring from time to time.
Simmer for 3 minutes, then remove from the heat.
Allow to get cold.

Stir in the flour, spice, and bicarbonate of soda, mixing thoroughly.
Put into a greased and lined cake tin about 8 inch ( 20 cm )
and bake in a pre heated oven for about one hour, at 180 C (350) or gas mark 4

when fully cooled, turn out and eat.
