carrot and sultana flan

Hi everybody,

One of my all time favourite puddings, is carrot and sultana flan. It sounds gross, but in actual fact, everyone who has had a slice of this, cant get over the fact that there are carrots in it!!

so here goes;

4oz / 110 g carrots cooked.
1oz / 25g melted butter
1 beaten egg
1 tabs sultanas
2 tabs wholewheat breadcrumbs. ( you can do this in a food processor)
2 tabs castor sugar
grated rind of 1 lemon
pinch of grated nutmeg
8oz / 225g shortcrust pastry ( I always use shop bought)
flaked almonds



method;

Sieve the carrots and mix with the butter and egg, or put the 3 ingredients in a liquidizer or food processor and blend to a pulp.
To this mixture, add the rest of the ingredients except the pastry and almonds.
Line an 8 inch (20.5 cm ) pie dish with the pastry, spread it with the mixture, scatter a few flaked almonds on top and bake on the top shelf
at gas mark 4 / 180C for half an hour.

hope you like this , it is sooo scrummy, you can serve it with vanilla ice cream or creme fraich or cream.
