elderflower cordial

hi everybody, as we are in our second year of recession, things are starting to get a bit tight money wise, so I thought that with everybody having to pull together, there seems to be a spirit of war time jovialness ( if there is such a word) so I thought i'd start with a free recipe, you can gather the fruits in the hedgerows for free; or in this case flower heads.




25 flower heads
2 lb sugar
2 lemons grated and squeezed, cut into small pieces.
2 oz citric acid 
2 pints boiled water


Remove stems from flower heads, and place in a large bowl, Add sugar, lemons and citric acid ,
Cover with the water and leave for 2 days, stirring occasionally,  Strain, Bottle, Dilute to taste. keep in the refrigerator
